Satay Chicken Rice Bowls are packed full of nutrient and flavour! They are fun and easy to make, and a meal the whole family will enjoy - even the kids!

The bowls are very versatile and most ingredients can be swapped depending on what you like and what you have in the fridge. The main components are:

Protein: Chicken - or use egg, beef, salmon, fish, chickpeas etc.
kale and carrot - or any vegetables that you like!
brown rice - or use quinoa, wild rice, buckwheat, amaranth etc.
Satay sauce (a must!), sesame seeds, coriander.

The star of this recipe is the Niulife Original Coconut Amino Sauce, which I am obsessed with! I have been adding it to almost all of my meals lately. It’s even delicious mixed with a tin of tuna πŸ˜‹

Coconut aminos is an awesome substitute for soy sauce. It is made from fermented coconut blossom nectar & spices. Ideal for salads, dressings, stir-fries, sushi, meat and fish, soups, splashed on vegetables or with rice and beans.

Satay Chicken Rice Bowl


1/2 cup brown rice
300g chicken, finely diced (use breast, tenderloin or boneless thigh)
2 Tbsp Niulife Original Coconut Amino Sauce
3 carrots, shredded or finely sliced
3 big handfuls of fresh kale
1 Tbsp Blue Coconut Coconut Oil (for cooking)
Toasted sesame seeds (to serve)
Fresh coriander (to serve)

Satay Sauce:

1/4 cup all-natural peanut butter
1 Tbsp miso paste
2 Tbsp rice vinegar
1 tsp finely chopped ginger
2 Tbsp Niulife Original Coconut Amino Sauce
1 tsp sesame oil
3 Tbsp water
1 Tbsp sweet chilli sauce


  1. Cook the rice according to packet directions.

  2. In a bowl, add the diced chicken and 2 Tbsp of coconut aminos. Set aside to marinate while you prepare the rest of the ingredients.

  3. Make the satay sauce by mixing all ingredients together. Set aside.

  4. Heat a little coconut oil in a pan and stir fry the vegetables until soft. Tip into a bowl and set aside.

  5. Using the same pan, add extra coconut oil and stir fry the chicken until cooked through.

  6. Lastly, assemble your bowl! Start with the rice, add the vegetables and chicken, then top with the sauce, sesame seeds and coriander.
