This gluten free Peanut Butter & Jam Brownie is SO delicious and super quick to whip up. Serve it to the with a dollop of Greek yoghurt for a yummy dessert the whole family will love.
If you are a peanut butter and jam fan, you will love these!
I used homemade jam for this recipe. If you are using store bought jam, make sure it contains all natural ingredients and ideally sweetened with a natural sweetener such as honey or maple syrup.
Peanut Butter & Jam Brownie
¼ cup coconut flour
½ cup ground almonds
½ cup cacao powder (or 100% cocoa powder)
1/2 tsp baking soda
¼ cup coconut oil, melted
¼ cup maple syrup
1 tsp vanilla extract
1/3 cup peanut butter
1/3 cup jam
Pre-heat the oven to 180 degrees and line a small baking tin with baking paper. The tin I used measured 16cm x 16cm.
Place all of the dry ingredients into a large bowl. Whisk well to remove any lumps.
Add in all of the wet ingredients and mix well to combine.
Pour the brownie mixture into the lined baking tin.
Blob the peanut butter and jam over the top of the brownie and using a blunt knife or skewer, marble the jam through.
Bake for 20-25 minutes or until cooked through.
To check the brownie is cooked, take a knife and insert it into the middle of the brownie. The knife will come out clean when it is cooked.
