Strawberry & Coconut Vegan Yoghurt

Here is a delicious and nutritious recipe for Strawberry & Coconut Yoghurt that is dairy free and quick to make. Serve it with homemade muesli and fresh fruit for breakfast or on it’s own as a tasty snack.

Finding a good dairy-free yoghurt that is affordable and tasty can be a little tricky sometimes. Coconut yogurt is delicious, but can become a little expensive if you eat it everyday. While this Strawberry & Coconut Vegan Yoghurt doesn’t contain the probiotics that coconut yoghurt has, it is a nutritious source of healthy fats and carbs and perfect if you’re looking for a dairy free alternative 😋


Strawberry & Coconut Vegan Yoghurt

Ingredients:

150ml of coconut milk
1 ripe banana
2 Tbsp of chia seeds
½ tsp of vanilla extract
1 cups fresh or frozen strawberries
1 Tbsp lemon juice
2 Tbsp walnuts

Instructions:

  1. Blend all ingredients in a high speed blender for 30 seconds or until smooth. Add a little water if the mixture is too thick.

  2. Pour into a jar and leave in the fridge to set for 2 hours or over night.

  3. Serve topped with walnuts.

Serves 1
