Walnut & Lentil Burgers
1/2 cup walnuts
1 small clove of garlic, crushed
1/4 red onion
1/2 a carrot, grated
1/2 a tin of lentils, drained and rinsed
1 tsp ground coriander
Salt and pepper to season
1 tsp of coconut oil
2 iceberg lettuce leaves
1/2 a tomato, sliced
2cm slice of cucumber
Pre-heat the oven to 180 degrees. Bake the walnuts for 8 minutes.
Drain and rinse the lentils with water.
Blend walnuts, garlic and red onion in a food processor. Add lentils, grated carrot, ground coriander and blend until combined.
Season with salt and pepper.
Heat the coconut oil in a pan on medium heat.
Divide the mixture into 2 equal portions and shape into patties. Place both patties in the hot pan and cook for 3-4 mins each side.
Serve with lettuce, tomato, cucumber and avocado.
