We have teamed up with Countdown to share this simple yet super tasty recipe for Halloumi & Pesto Pizza. It is the perfect meal for an easy Friday night dinner when all you really want to do is chill on the couch, watch TV series and eat your favourite takeaway meal (pizza!).
I love the idea of using halloumi as the protein source for pizza as opposed to the more traditional meat options such as bacon, chicken, salami etc that we often pack on top of a pizza.
With the amount of vegetarian protein sources available to us, it is now a lot easier to prepare a meat-free meal that is both tasty and nutritious. With Countdown stocking loads of meat-free options at an affordable price, including more plant-based meals into our diet is super easy! 😊🙌
Halloumi & Pesto Pizza
2 x wholegrain wraps
2 heaped Tbsp pesto
1 red capsicum, sliced
1 handful of cherry tomatoes, sliced
8 large olives, sliced
180g Countdown Halloumi Cheese
Spread the pesto over each wrap. Arrange the capsicum, tomato and olives on the wrap. Top with the sliced halloumi cheese.
Bake at 190 degrees for 10 minutes then grill on medium heat for 2 minutes or until the halloumi is golden.
