It's winter time here in NZ which means lemons are in season. My fruit bowl is now overflowing with lemons so I knew it was time to make a yummy lemon slice ๐Ÿ˜Š 

I feel like I do need to do a little bit more experimenting with this recipe. I was hoping that the base would be crunchy.....but it turned out soft and cakey! It would make a good lemon cake ๐Ÿ˜. Next time I make this, I'll possibly skip the egg and hope for a more crunchy base. Or try a base more like the one I used for the Banoffee Pie

A very important step, is to pour the egg topping over the base as soon as it comes out of the oven and while it is still hot. This will prevent the base from floating to the top where you'll be left with an upside lemon slice! If this does happen - don't worry, pour over only half of the egg topping, cook it for 5 minutes then pour the rest over and cook it until set. 

Lemon Slice



  • 1 & 1/2 cups ground almonds
  • 1/2 cup tapioca flour
  • 1/4 tsp baking soda
  • Pinch of sea salt
  • 1 egg
  • 3 Tbsp coconut oil, softened
  • 1/2 tsp vanilla extract
  • 2 Tbsp maple syrup
  • Zest of 1 lemon


  • 3/4 cup cup lemon juice (about 4 lemons)
  • 1/4 cup coconut milk
  • 3 eggs
  • 3 Tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 Tbsp tapioca flour


  1. Pre heat the oven to 180 degrees.
  2. In a bowl, mix together all the base ingredients and press into a lined baking tin. My tin measured 25x25cm.
  3. Bake base for 13-15 minutes.
  4. In the same bowl, whisk together all of the topping ingredients. As soon as the base comes out of the oven, pour the egg topping over the top. It is important to do this while the base is still hot. 
  5. Place the slice back into the oven and bake for 15 minutes or until set. 
  6. Leave the slice to cool down to room temperature then place in the fridge to cool for 2 hours before slicing.
