Here is a simple tasty recipe for Chicken Choy Mein. I am super stoked to share this recipe with you as it actually tastes just like the real deal from the takeaway shop, sans the gluten and MSG 😃
It is a great recipe to make during the week for a family dinner (what kid doesn’t love noodles right!?). Or if you are cooking for one, cook once and eat twice….which is something I have been doing a lot lately! 😊
Chicken Chow Mein
1 tsp coconut oil
2 x chicken breast
1 small red onion, sliced
1 carrot, sliced
2 cups of cabbage, sliced
1 red capsicum, sliced
1 courgette, sliced
2 garlic cloves, crushed
2 Tbsp tapioca flour or cornflour
1/2 cup chicken stock or bone broth
2 Tbsp tamari sauce
60g dried vermicelli rice noodles
1/4 cup cashew nuts
Soak the rice noodles in boiling for for about 3 minutes.
Slice the chicken into thin pieces and add to a hot pan with a little coconut oil. Cook until the chicken turns white and it cooked through. Set aside.
Heat the coconut oil in a large pan and add the onion. Stir for 2 minutes on medium heat. Add the rest of the vegetables and continue cooking.
Add the tapioca flour or cornflour and cook for 1 minute. Add the stock or broth, tamari sauce, cooked rice noodles and cashew nuts.
Heat through and allow the sauce to thicken before serving.
