Homemade Buckwheat Wraps

I have to admit, wraps are great for whipping up an easy healthy meal at any time. You can glad-wrap them and take them to work or use them as pizza bases for homemade healthy pizzas. However about 90% of the wraps that I have seen in the supermarket are filled with rubbish ingredients, vegetable oils, preservatives and so many food chemicals.

The recipe below is for homemade healthy wraps that are not filled with food chemicals, tasty and so easy to make. I use buckwheat flour as the base but I think you could almost use any flour and this recipe should work.

However, the traditional risotto while it tastes amazing it is a very heavy and rich meal that can often leave you feeling bit full and stuffed after you have eaten it. This quinoa risotto is a lighter and more nutritious version after swapping the rice for quinoa and adding in a whole heap of veggies to the mix. It turned into such a yummy meal that the whole family will enjoy - I can't wait to make it again!

You will never guess that this recipe contains chickpeas! Don't let this put you off making them because they are deeelish and you really can not taste the chickpeas at all. The chickpeas give this brownie the most amazing chewy and soft texture, plus together with the peanut butter it is pretty high in protein too. Make these to share with family and friends on the weekend or give them to the kids for a tasty afternoon tea treat.

Now that zucchini/courgettes are coming into season here in NZ I am seriously loving these fritters! The trick is to drain out as much water as possible, you will be surprised at how much water actually comes out of them. If you don't have coconut flour, you could try using another sort of flour but you may need to add extra as coconut flour absorbs a lot of liquid without needing to use much.

While I am not a vegetarian, I eat mostly vegetarian meals and include chicken or fish in my diet about once a week. My body thrives of veggie based meals and really feels amazing! I find a meal that is heavily based around meat, especially read meat I just feel a bit bloated and sluggish afterwards. This recipe is so delicious I could eat them every night! I think they would also freeze really well, make the patties and freeze them (I would freeze them raw) for an easy weeknight dinner or work lunch.
