Chicken Chow Mein

Here is a simple tasty recipe for Chicken Choy Mein. I am super stoked to share this recipe with you as it actually tastes just like the real deal from the takeaway shop, sans the gluten and MSG πŸ˜ƒ

It is a great recipe to make during the week for a family dinner (what kid doesn’t love noodles right!?). Or if you are cooking for one, cook once and eat twice….which is something I have been doing a lot lately! 😊


Chicken Chow Mein

Ingredients:

1 tsp coconut oil
2 x chicken breast
1 small red onion, sliced
1 carrot, sliced
2 cups of cabbage, sliced
1 red capsicum, sliced
1 courgette, sliced
2 garlic cloves, crushed
2 Tbsp tapioca flour or cornflour
1/2 cup chicken stock or bone broth
2 Tbsp tamari sauce
60g dried vermicelli rice noodles
1/4 cup cashew nuts

Instructions:

  1. Soak the rice noodles in boiling for for about 3 minutes.

  2. Slice the chicken into thin pieces and add to a hot pan with a little coconut oil. Cook until the chicken turns white and it cooked through. Set aside.

  3. Heat the coconut oil in a large pan and add the onion. Stir for 2 minutes on medium heat. Add the rest of the vegetables and continue cooking.

  4. Add the tapioca flour or cornflour and cook for 1 minute. Add the stock or broth, tamari sauce, cooked rice noodles and cashew nuts.

  5. Heat through and allow the sauce to thicken before serving.

Serves 2

We have teamed up with Countdown to share this tasty Vanilla & Cinnamon Baked Custard recipe. It’s such a light and refreshing dessert - perfect for summer, and what’s best is that it literally takes 10 mins to whip up!

I am super impressed with the Health Food section that Countdown now has, my local is Greenlane and it is awesome! You walk in there and you feel like you are in a little health food shop - but with way better prices 😁

Vanilla & Cinnamon Baked Custard

Ingredients:

1 & 1/2 cups Macro Organic Almond milk
4 eggs
2 tsp vanilla extract
3/4 tsp cinnamon
4 Tbsp maple syrup (if your almond milk is unsweetened then add an extra Tbsp of maple syrup)

Instructions:

  1. Pre-heat the oven to 180 degrees.

  2. Add all of the ingredients to a medium sized bowl and whisk well and pour the mixture into 4 ramekins.

  3. Arrange the ramekins in an oven-proof dish, leaving some space between each ramekin. Pour in just-boiled water from the jug around the ramekins, until it comes about half-way up their sides.

  4. Bake for about 30 minutes, until the custard is just set. Test by giving a gentle shake – if there is a slight wobble in the center of an otherwise solid mass then it is done, otherwise return to the oven and re-test in another 5 minutes.

  5. Either leave to cool for 30 minutes and serve warm, or refrigerate to serve chilled.
