With Spring upon us here in NZ, the weather is getting warmer, evenings are lighter and summer fruit and veggies are hitting the supermarket shelves. I can not wait to start eating dinner outside on the deck while watching the sunset and eating fresh delicious summer meals.

It’s Coeliac Awareness week here in New Zealand and to show our support we have teamed up with Countdown to showcase their range of Free From Gluten products and share with you a quick and simple food hack to make a gluten-free pizza at home 🍕

It’s fairly safe to say that every single one of us either has or knows someone with a gluten intolerance or suffers from Coeliac disease. I totally understand that living with a food intolerance can be super difficult. Trying to work out what you can and can’t eat, dealing with social situations that involve food, and putting up with a bloated and sore stomach after eating.

Countdown have a range of Free From Gluten alternatives to help make living with a gluten intolerance that little bit easier. This week we have put their Free From Pizza Dough to the test.

The pizza dough was super quick and easy to make and tasted really good! I remember back in the day when gluten-free products first hit the shelves and everything tasted like cardboard 🙈

And what’s best, the pizza dough pack only cost $3.00 which I thought was amazing!


  • You can add any of your favourite toppings to this pizza base. Some other tasty ideas are; bacon, olives, avocado, cheese, roast pumpkin, caramelized onion.

Gluten-Free Chicken & Mushroom Pizza


1 packet of Countdown Free From Gluten Pizza Dough Mix
2 eggs
60ml coconut or olive oil
3 Tbsp tomato paste
1/2 a red onion, thinly sliced
1/2 a capsicum, thinly sliced
2 button mushrooms, thinly sliced
2 small chicken thighs, roasted and shredded
1/4 cup crumbled feta


  1. Pre-heat the oven to 200 degrees Celsius.

  2. Prepare the Gluten-Free pizza dough by following the instructions on the packet. Spread the pizza dough onto a lined baking tray. You can make either 1 large pizza or 2 medium sized pizzas.

  3. If you prefer a more crisp pizza base, bake it for 5 minutes. Otherwise, go straight to step 4.

  4. Spread the tomato paste over the pizza base. Finely chop the vegetables and layer them over the pizza base. Add the chicken and feta cheese then bake the pizza in the oven for 10-15 minutes or until cooked to your liking.
