Poached Eggs on Mushrooms & Spinach

Poached Eggs on Mushrooms & Spinach


2 x flat mushrooms 
1/2 tsp coconut oil or olive oil - or use spray oil
1/2 tsp mixed herbs
1/2 tsp garlic powder
1/2 tsp paprika
1/4 tsp Himalayan salt
2 eggs
2 Tbsp of vinegar
2 handfuls of spinach, wilted in microwave or boiling water


  1. Pre-heat the oven grill to medium heat.

  2. Place the mushrooms upside-down on a lined baking tray and sprinkle with salt, paprika, mixed herbs, garlic and oil.  Grill for 10 minutes or until soft. 

  3. Heat 3 cups of water in a small pot until just boiling, turn down to a simmer. Add the vinegar and stir.

  4. Crack the eggs into a small bowl and carefully place them in the simmering water. Cook for 3 minutes and remove with a slotted spoon. 

  5. Serve the mushrooms with spinach and poached eggs, season well
