This Quinoa & Roast Vegetable Salad is SUPER tasty while also being packed full of flavour and goodness!
Make it on the weekend as part of your food prep for quick and easy work lunches. Enjoy it on it’s own or add your favourite protein source for a more substantial meal 🥗👌

Quinoa & Roast Vegetable Salad
1 small red capsicum
1 small red onion
Salt to season
½ a tsp dried mixed herbs
½ a tsp paprika
1 Tbsp coconut oil
¾ cup of cooked quinoa
2 tablespoon pumpkin seeds
½ cup chickpeas
1 large handful of rocket
Pre-heat the oven to 180 degrees. Line a baking tray with baking paper.
Wash and chop all vegetables into bit-sized pieces and place on the tray. Sprinkle with mixed herbs, paprika, salt and coconut oil and mix.
Place in the oven and roast for approximately 30 minutes or until cooked, stirring regularly.
Cook quinoa per packet instructions and use 3/4 of a cup of cooked quinoa for the salad.
Mix the cooked quinoa, roast vegetables, chickpeas and seeds together in a bowl and season with salt and pepper.
Mix with the fresh rocket before serving.
