Try this Lentil Bolognese with Zucchini Noodles for a tasty and nourishing vegetarian meal. It is gluten free, packed full of nutrients, budget friendly and super easy to make! 👌
The recipe makes enough for 1 serve but can easily be doubled, tripled etc to serve more.
Lentil Bolognese with Zucchini Noodles
1 large zucchini
1/4 of a red onion, finely diced
1 small garlic clove, crushed
1 carrot, grated
Half a tin of tinned tomatoes
6 x kalamata olives
2 x sun-dried tomatoes
1/4 tsp mixed herbs
1/4 tsp paprika
1 tsp tamari sauce
1/4 tin of lentils
To make the zucchini noodles either use a spiralizer or peeler to make long strips.
Heat a little oil in a large pan and cook the onion until soft. Add the garlic and carrot and cook until the carrot is soft.
Add the rest of the ingredients and cook for a further 5 minutes until heated through.
Stir fry or steam the zucchini noodles to soften before serving.
