I made this Chocolate Banana Loaf as a last minute, unplanned sort of thing only as I had 4 bananas in my fruit bowl going very brown! But it actually turned out to be one of the best things I’ve ever made! 😋
I based the recipe off the Banana & Coconut Loaf recipe from the blog with a few changes here and there and a lot of chocolate chips added to the mix!
If you prefer to skip the chocolate chips that is totally fine. You could also swap the chocolate for another ingredient such as cranberries, dates, walnuts or leave as a yummy banana loaf on it’s own.
Chocolate Banana Loaf
4 ripe bananas (the riper the better)
1/4 cup coconut oil
1/4 cup peanut butter
1 tsp vanilla extract
Juice of half a lemon
1/2 cup coconut flour
1/4 cup ground almonds
Pinch of sea salt
1 tsp cinnamon
1/2 tsp baking soda
1/2 cup chocolate chips
Optional toppings: walnuts, coconut and extra choc chips
In a large bowl mash the bananas. Add all of the wet ingredients and mix well.
Add all of the dry ingredients and mix.
Lastly fold through the chocolate chips.
Pour the mixture into a lined loaf tin. Bake at 180 degrees for 40-45 minutes or until cooked through. To check if the loaf is cooked, insert a knife or metal skewer into the middle, it should come out clean.
Makes 1 loaf, 10-12 slices
