I recently discovered YUM granola at PaknSave (I know right, so convenient!). I was super impressed at the ingredients (all natural, no refined sugar and no nasties) and then fell for the story behind their company and how they started creating their nutritious granola blends.
For this recipe I used the YUM SuperSeed Granola Clusters which are great to add to raw treats (like I have), sprinkled over coconut yoghurt and fresh fruit or eaten on their own as the perfect afternoon snack.
And how awesome are these ingredients: Seeds (60%) [Buckwheat, Sunflower, NZ Quinoa, Flaxseed, Chia, Sesame], Hazelnut, Coconut, Honey, Olive Oil, Cranberries, Ginger, Salt.
I love how easy and simple this recipe is to make. You can literally make it in 5 minutes, which is amazing but also pretty dangerous 😋
The container I used measured 18cm x 24cm.
I find this chocolate recipe tastes the best when you use unscented coconut oil as the coconut oil flavour can be too overpowering otherwise. Hence why I love Blue Coconut which you can find at any supermarket.
Chocolate Granola Bark
1/2 cup nut butter (almond butter, peanut butter etc)
1/2 cup Blue Coconut Coconut Oil
1/4 cup cacao powder or 100% cocoa powder
1 tsp vanilla extract
Pinch of sea salt
2 Tbsp maple syrup or honey
1 cup of YUM SuperSeed Granola Clusters
In a medium sized bowl, mix together all of the ingredients except for the granola. Pour the chocolate into a baking paper lined container. Sprinkle the granola over the top.
Freeze for at least 1 hour or until set.
Roughly chop the granola and store in an air tight container in the freezer.
Makes approx 16 pieces
