Strawberry & Coconut Ice Blocks

These Strawberry and Coconut Ice Blocks are easy to make, so refreshing, and use only 3 ingredients! They are dairy free, gluten free, and contain no refined sugars. The perfect treat to enjoy on a hot day or an after dinner summer dessert. 😋

I bought my ice block moulds and sticks (the moulds came with bright plastic sticks) from the $2 shop in Royal Oak Mall.

Strawberry & Coconut Ice Blocks

Ingredients:

3 cups fresh strawberries
300ml (or use 1 tin) of coconut milk
1/2 tsp vanilla extract

Instructions:

  1. Blend together the strawberries, vanilla and the coconut milk.

  2. Pour the mixture into ice block moulds, then carefully add the ice block sticks.

  3. Leave in the freezer until set which should take 1-2 hours depending on the size of your moulds.

    Makes 8 medium sized ice blocks
