Sticky Date Puddings with Caramel Sauce

Sticky Date Puddings with Caramel Sauce has been on my list of recipes to make for AGES! I have experimented with them a couple of times but they have never turned out that great. I based this recipe off this Feijoa Cake and they turned out deeelish! 😋

Sticky Date Pudding as well as Choc Self-Saucing Pudding have got to be the ultimate winter desserts! No need a special occasion to make this dessert, it's a super easy recipe that you can whip up on the weekend and share with the family. It is gluten free, dairy free and tastes incredible! 

NOTES:

  • The puddings stuck to the muffin cases a little, so next time I make these I will probably use ramekins. 
  • Instead of making individual puddings you could make one large pudding by cooking the batter in an oven proof dish. You will need to adjust the cooking time as it may take a little longer to cook through. 

Sticky Date Puddings with Caramel Sauce

Ingredients:

Sticky Date Puddings:

  • 3/4 cup dates
  • 2 ripe bananas
  • 3 Tbsp coconut oil
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup ground almonds
  • 1/2 cup tapioca flour
  • 1 & 1/2 Tbsp cinnamon
  • 1/2 tsp baking soda
  • Pinch of sea salt 

Caramel Sauce:

  • 200ml coconut milk or cream
  • 2 Tbsp coconut sugar
  • 1 Tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Instructions:

  1. Soak the dates in boiling water for 5-10 minutes and then drain. 
  2. In a blender or food processor blend together the banana, eggs, dates, coconut oil and vanilla. Pulse in the dry ingredients until just combined or mix together in a bowl. 
  3. Pour the batter into individual muffin cases or ramekins. Cook the puddings for 25-30 minutes or until cooked through. 
  4. To make the caramel, place all ingredients into a pot on medium heat. Bring to the boil stirring constantly. Reduce to a gentle boil and stir regularly until the sauce reduces down and thickens, this should take about 15-20 minutes. 

Makes 6 individual puddings
