Nothing beats a big pile of delicious pancakes for brekky on the weekend (or any day of the week really!). The secret ingredient to these pancakes is the mashed sweet potato that make them thick and moist while also providing a healthy dose of fiber too.

I would also recommend you give these pancakes a go with your kids as I think they will go down a real treat. You could make the batter in advance and keep it in the fridge. Then cook them up for a tasty after school snack and smother them with peanut butter yummm!
Sweet Potato Pancakes
- 3/4 cup mashed sweet potato/kumara (or 1 medium sized sweet potato approx 220g)
- 2 eggs
- 1/4 cup ground almonds
- 1 tsp cinnamon
- Pinch of sea salt
- 1/2 vanilla extract
- 1/2 Tbsp maple syrup
- 1/4 tsp baking soda
- Mix all ingredients together in a bowl.
- Heat coconut oil in a flat pan on medium heat.
- Add 1/4 cup of pancake mixture and leave it to cook for a few minutes before flipping carefully.
Makes 5 pancakes
