This Curried Mayo Chicken Salad is packed full of flavour and so simple to make! We’ve swapped the mayo for yoghurt for a healthy spin and also up the nutrients. It’s the perfect easy weekday lunch to take to work or have the chicken and yoghurt mix on it’s own as a snack.
Curried Mayo Chicken Salad
1/4 cup coconut or Greek yoghurt
1 tsp of curry powder (to taste)
1/4 tsp cayenne pepper
120g chicken breast, cooked and shredded
2cm slice of cucumber, diced
1 stalk of celery, diced
4 red grapes, halved
2 Tbsp chopped fresh parsley or other fresh herb of your choice
1/2 a capsicum, finely chopped
Salt and pepper
2 handfuls of mixed salad greens
In a bowl, mix together the yoghurt, curry powder and cayenne until smooth.
Add the cooked chicken, celery, grapes, cucumber, capsicum, parsley, salt and pepper and fold through.
Serve on top of the mesclun and mix through before eating.
