Blueberry & Banana Pancakes

These Blueberry & Banana Pancakes are SUPER simple and so nutritious! They make the perfect breakfast or even a quick afternoon snack. Plus they taste seriously good, like legit pancakes πŸ˜‹πŸ˜‹ I also think they will be a hit with the kids too πŸ‘Œ

NOTES:

  • Swap the blueberries for any other frozen or fresh fruit pieces.

  • These are delicious served with coconut or greek yoghurt. For the video I mixed in a little freeze dried raspberry powder into the yoghurt, so tasty!

  • Serve with chopped walnuts for a nice crunch too.


Blueberry & Banana Pancakes

Ingredients:

1 ripe banana
1 egg
2 Tbsp ground almonds
1 Tbsp ground flaxseed
ΒΌ tsp baking powder
Pinch of salt
ΒΌ teaspoon ground cinnamon
2 Tbsp blueberries (fresh or frozen)

Instructions:

  1. Mash the banana with a fork and whisk in the egg.

  2. Add the ground almonds, flaxseed, baking powder, salt and cinnamon and mix well. Fold in the blueberries.

  3. Leave to sit for 5 minutes.

  4. Heat a little coconut oil in a small pan on medium heat. Pour the pancake mixture in to the pan and cook on low to medium heat until almost firm. Flip carefully and cook for another 1 minute.

  5. You can either make 4 mini pancakes (like the video) or 1 large.
