Easy Everyday Salad

This Easy Everyday Salad, is literally so easy and perfect for an everyday type of meal. Nothing too fancy, no cooking required, just a good simple salad that I think everyone needs to know how to make. It is also SO versatile, you can literally add anything you like to it. Lately I have been adding marinated chicken (marinated in tamari sauce), it’s so yum!


  • Add an optional protein source such as chicken, salmon, eggs, black chickpeas.

  • Bulk up this salad with extra carbs by adding cooked quinoa, roast sweet potato or roast pumpkin.

  • If you can’t get your hands on a ripe avocado, add another healthy fat such as olive oil or an extra spoonful of tahini.

  • This salad is also super tasty with Cashew Aioli mixed through it.

  • If you are making this for your work lunch, make the salad the night before and pour the dressing into a small container. When you are ready to eat it, simply mix the dressing through.

Easy Everyday Salad


2 handfuls of mesclun lettuce
1 carrot, grated or shredded
1 x tomato
2cm sized piece of cucumber
½ an avocado
2 Tbsp mixed nuts and seeds
1 Tbsp tahini
2 Tbsp coconut or Greek yoghurt
1 Tbsp balsamic vinegar
Salt to season
Feta cheese (optional)


  1. Wash and finely chop all the vegetables.

  2. Place everything in a large bowl in the order listed and mix well to spread the dressing throughout the salad.
