Try this Cajun Garlic Prawn recipe one night this week for a quick and easy weeknight dinner. The great thing about prawns is not only do they taste amazing, they are so quick to cook! Literally a couple of minutes in a hot pan and their done 😃.
This Cajun Garlic Prawn recipe is from week 11 from the 12 week Mind & Body Transformation.
Cajun Garlic Prawns
4 large zucchini (or use a 2 zucchini and 2 carrots)
30 prawns, detailed
1/2 a tsp of paprika
1/2 tsp garlic powder
1/2 tsp oregano
1/2 tsp thyme
1/2 tsp salt to season
2 small garlic cloves, crushed
1 tsp coconut oil
2 small red capsicums, sliced
1/2 of a red onion, sliced
Turn the zucchini into noodles by either spiralizing, use a mandolin or grate.
Place the prawns in a bowl, add the paprika, salt, garlic powder, oregano and thyme and mix.
Heat coconut oil in the pan and add onion, garlic, capsicum. Cook for 2 minutes.
Add in the zucchini noodles and cook for a further 3 minutes.
Add the shrimps and stir through until they are opaque.
Tip into serving bowl.
