This Beetroot & Carrot Omelette has got to be one of my favourite breakfast recipes from the 12 Week Mind & Body Transformation. When I was living in Dubai I made this for breakfast everyday for about a year….I was obsessed! Every Sunday I would use my food processor to grate a large container full of carrot and beetroot so it was super quick and easy to make this omelette during the week.
This tasty omelette contains the perfect balance of protein, vegetables and healthy fats….exactly what you need for a nourishing breakfast. Plus the combination of carrot and beetroot make it deliciously sweet! Breakfast, lunch or dinner, this recipe is a winner! 😄
Beetroot & Carrot Omelette
1 carrot, grated
1 small beetroot, grated
2 big handfuls of chopped spinach or kale
2 eggs, whisked
Salt and pepper to season
1/2 a small avocado
Heat a teaspoon of coconut oil in a pan and stir fry the grated carrot, beetroot and chopped kale or spinach until soft (approx 3 minutes).
Season with salt and pepper.
Add eggs, stir well and shape into an omelette/fritter. Leave to cook on medium heat for 1 minute, flip and cook for another minute.
Serve with avocado.
