Black Bean Nachos

These Black Bean Vegetarian Nachos is another one of the tasty vego meals from the 12 Week Mind & Body Transformation.

This recipe is such a great family friendly dinner that kids will enjoy just as much as the adults! It’s such a versatile recipe where you can swap the veggies for any other veggies that you enjoy and you can even add beef or chicken mince if you’d prefer a bit of meat in there!

The tomato mixture also freezes well so it is perfect to make as part of your meal prep for the work week 😄


Black Bean Vegetarian Nachos

Ingredients:

2 small sweet potato
1-2 tsp coconut oil
1 tsp mixed herbs
1/2 tsp Himalayan salt
1 small red onion, finely diced
2 small garlic cloves, crushed
1 carrot, grated
1 zucchini, grated
1 tin of black beans, drained and rinsed
1 tin of chopped tomatoes
1 tsp dried herbs
1 tsp paprika
1 tsp curry powder
1 Tbsp of tamari sauce
Salt and pepper to taste
Greek or coconut yoghurt to serve
Avocado or guacamole to serve

Instructions:

  1. Pre-heat the oven to 160 degrees. Line a baking tray with baking paper.

  2. Thinly slice the sweet potato and place on to the baking tray. Try to keep the slices in a single layer so they can crisp up.

  3. Add the coconut oil, mixed herbs and salt, mix well.

  4. Roast in the oven at for 40 minutes or until crisp. Stir every 10 minutes .

  5. Heat a little coconut oil in a large pan on medium heat.

  6. Add the onion and stir fry until soft.

  7. Add the garlic, herbs, spices, carrot and zucchini. Continue to cook for another 3 minutes.

  8. Stir through the black beans, tinned tomatoes and tamari. Season with salt and pepper to taste.

  9. Serve the sweet potato chips with the tomato black bean mixture and top with guacamole and coconut or Greek yoghurt.
