Cashew Nut Milk 3 Ways

cashewnutmilkhomemade

I have never been a big milk drinker, although I do have chai tea (I use this brand) every morning with a dash of milk. Over the last couple of months I have completely cut out all of my dairy. I have stopped having feta in my salads, swapped my greek yoghurt for coconut yoghurt and started making my own cashew nut milk for my morning chai tea.

I have noticed an improvement in my gut and digestion, I am experiencing less bloating which I am loving!

Cashew Milk

  • 1/4 cup raw cashew nuts (soaked for at least 4 hours - I usually soak mine overnight)
  • 1 cup water
  • Pinch of sea salt

Makes 1 cup of plain cashew milk

Vanilla Cashew Milk

  • 1/4 cup raw cashew nuts (soaked for at least 4 hours - I usually soak mine overnight)
  • 1 cup water
  • 1/2 tsp vanilla extract
  • 1/2 tsp vanilla powder (optional)
  • 1 x date

Makes 1 cup of vanilla flavoured cashew milk

Chocolate Cashew Milk

  • 1/4 cup raw cashew nuts (soaked for at least 4 hours - I usually soak mine overnight)
  • 1 cup water
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 x date
  • 1 Tbsp raw cacao powder (or 100% cocoa powder)

Makes 1 cup of chocolate flavoured cashew milk

Instructions:

  1. Drain and rinse the cashews with water.
  2. Place all ingredients into a blender and blend until smooth and creamy. Depending on how powerful your blender is this may take between 30 seconds to 2 minutes.
  3. Chill in the fridge before serving.
  4. Store the milk in the fridge for up to 4 days.
